Looking for spicy soup recipes? Here is a delicious one! When you're feeling under the weather (or just in need of something delicious), this Spicy Thai Chicken Soup hits the spot every time!

I haven’t had a cold yet this season (knock on wood!), but last week I had a Thai massage.

Two very different things, right? Well, not quite.

It’s been years since I’ve had a Thai massage — the last time was in 2011 when I was actually in Thailand! I recalled that I felt like a million bucks after the last one, even though I had spent an entire week hitting the pavement throughout Bangkok.

After the massage, I walked away feeling like I was floating. Then, the next day, I could hardly get out of bed. In fact, as I recall, I even missed a show I had tickets for!

Thai massage is absolutely incredible, and I’ve heard from several people that if you go regularly then your body stops having that reaction.

It’s similar to getting any other sort of massage I suppose; somehow it just seems to pull all the icky out of your body and flush it out… in a way that sometimes feels like having a cold!

I didn’t get a sore throat or sniffles, but I was exhausted, my muscles were achy, and I felt like I couldn’t get warm.

This Spicy Thai Chicken Soup brought me back to life.

Here’s what you get: hot chicken stock that sticks to your lips, vibrant ginger that lifts your spirits, and just enough heat to wake your tired self up.

The tomatoes and mushrooms in this spicy Thai soup recipe add bulk, earthiness, and acidity, while the scallions, cilantro, and lime wedges add freshness (and a bit of pretty green).

Ingredient Sourcing:

Lemongrass you should be able to find near the herbs in the produce section. If not, you can always find it at your nearest import market.

If you’re desperate, I think I’ve seen minced lemongrass in paste form near the tubes of garlic and basil. Read my tips about lemongrass in my Fresh Lemongrass Tea recipe.

Fish sauce is on the Asian foods aisle next to the soy sauce, or you can find the Fish Sauce on Amazon.

Chili-garlic sauce can also be found on the Asian foods aisle, or, for ultimate laziness, have Amazon send chili-garlic sauce to your house.

Ingredients

  • 1 quart chicken stock
  • 1 small stalk lemongrass
  • 1 tablespoon minced garlic
  • 1 inch fresh ginger root - grated
  • 3 scallions - sliced, dark green pieces separated
  • 1 large tomato - cut into wedges
  • 1/4 pound white mushrooms - about 5, sliced
  • 1 cup diced cooked chicken
  • 2 tablespoons fish sauce
  • 1 tablespoon chili-garlic sauce
  • 1/4 cup chopped fresh cilantro leaves
  • 1 lime - cut into wedges

Instructions

  • Bring the chicken stock along with 2 cups of water to a boil in a large pot over high heat. Give the lemongrass stalk a good whack with a mallet to open it up and add it to the pot along with the garlic, ginger, and scallions (white and light green parts only, reserve the dark parts for garnish).
  • When the broth comes to a boil add the tomato, mushroom, and chicken to the pot. Stir in the fish sauce and chili-garlic sauce. Allow the soup to come to a boil, then turn off the heat and let rest for 5 minutes. Taste and add additional fish sauce until it is sufficiently salty.
  • Ladle into soup bowls and top with the reserved dark green scallion slices and a sprinkling of chopped cilantro. Serve with lime wedges for squeezing.
