I can’t get enough of my backyard these past few weeks.

True, it’s been UNBEARABLY hot here in Texas.

And I’m really not all that cute when I’m sweating.

But I waited ALL YEAR for the weather to be this nice, so I will make myself some Thai Limeade and sit outside in the heat.

I’m able to report that this limeade tastes delicious when spiked with Gin. And also with Vodka. And also with Champagne.

Just saying.

You should be able to find lemongrass stalks in a well-stocked grocery store. Read more about my lemongrass addiction and shopping advice in this post on making lemongrass tea!

Lime leaves can sometimes be found in stores such as Whole Foods, but I usually buy mine at the local Asian import supermarket and keep them in the freezer so they don’t go bad.

Ingredients

  • 1 cup white sugar
  • 1 cup water
  • 1/3 cup lime leaves - about 20 leaves
  • 1/4 cup chopped lemongrass stalk
  • 1 cup lime juice - for me, this was about 7 limes
  • 3 cups cold water + 1 cup ice
  • Lime wheels for garnish - optional

Instructions

  • Combine the sugar, 1 cup of water, lime leaves, and lemongrass in a saucepan over medium heat. Allow the simple syrup to steep for 10 minutes. Strain the leaves and lemongrass pieces from the liquid. Let cool for 10 minutes.
  • Combine the cooled syrup with 3 cups cold water and 1 cup of ice. Stir in the lime juice. Serve over ice with lime wheels (if desired).
