Another way this dish is so versatile is that it can be served as a main dish with sides to pair with it, or, it can be served as a side to a main dish.

One by one, place 3 sheets of phyllo dough in the bottom of the dish and brush each with olive oil before adding the next one.

Next, place two sheets of phyllo dough on the short ends of the baking dish with the long edge of the phyllo dough draped halfway over the side of the dish, then repeat with the other side.

For a nice crisp top, lightly fold over and crumple a sheet of phyllo dough and place it on top, repeat with the remaining sheets of phyllo dough, which should be 7-9 more sheets so that the entire top of the dish is covered with two rows of puffy crumpled phyllo dough. Brush the top layer with olive oil.

To make the chicken souvlaki marinade, combine the olive oil, fresh lemon juice, minced garlic, oregano, salt and pepper in a large zip top bag.

Add in the chicken and coat with the marinade, squeeze out the excess air and seal the bag.

Marinate for at least 1 hour, but no more than 6 hours.

How to Make Chicken Souvlaki Marinade

Preheat your outdoor grill to medium-high heat and lightly oil the grate. Alternatively, you can cook these in the oven by preheating the broiler.

Remove the chicken from the marinade and thread onto skewers (if you are using wooden skewers be sure to soak them in water for at least 30 minutes in advance), then discard any unused marinade.

How to Make Chicken Gyros at Home

Make the Tzatziki Sauce

Step #1: Make this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.

Marinate the Chicken

Step #1: Measure the marinade ingredients and put them into a 1-gallon zip top bag, close the bag, and then massage the bag to mix well.

Step #2: Add the chicken tenders to the zip top bag, close the bag, and then massage the bag so that each chicken tender is well covered by the marinade.

Step #3: Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don’t marinate it longer than 24 hours or your chicken will be too mushy.

Warm the Pita Bread

Step #1: Preheat your oven to 250 degrees Fahrenheit. Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.

Cook the Chicken

Step #1: You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill/grill pan with olive oil, then preheat using medium-high heat.

Step #2: After the grill/grill pan is hot, remove the chicken from the marinade bag and place it on the grill/grill pan.

Step #3: Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.

Step #4: Remove the chicken from the grill/grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.

Ingredients

Gyro Wrappers

  • 8 pita breads or flatbreads

Tzatziki Sauce

Chicken

  • 2 lbs. chicken breast tenders boneless, skinless
  • 2 tablespoons extra virgin olive oil

Chicken Marinade

  • 3 tablespoons Greek yogurt plain, full fat
  • 3 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 3 teaspoons minced garlic
  • 2 teaspoons marjoram
  • 2 teaspoons rosemary
  • 1 1/2 tablespoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish

  • 1 cup seeded and finely diced tomatoes
  • 1 cup finely diced cucumbers peeled or unpeeled
  • 1 cup finely diced red onion
  • 1 cup crumbled feta cheese
  • 1/2 cup finely diced flat leaf Italian Parsley (optional)

Instructions

Make the Tzatziki Sauce

Marinate the Chicken

  • Measure the marinade ingredients and put them into a 1 gallon zip top bag, close the bag and then massage the bag to mix well.
  • Add the chicken tenders to the zip top bag, close the bag and then massage the bag so that each chicken tender is well covered by the marinade.
  • Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don’t marinate it longer than 24 hours or your chicken will be too mushy.

Warm the Pita Bread

  • Preheat your oven to 250 degrees Fahrenheit. Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.

Cook the Chicken

  • You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill / grill pan with olive oil, then preheat using medium high heat.
  • After the grill / grill pan is hot, remove the chicken from the marinade bag and place on the grill / grill pan.
  • Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.
  • Remove the chicken from the grill / grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.
  • Slice the chicken tenders and put on a serving plate.

Assemble the Gyros

Lamb and Beef Gyros Recipe with Authentic Greek Tzatziki Sauce

Ingredients

Ground Lamb and Beef Gyro Meat

  • ½ lb. ground lamb lower the fat content the better
  • ½ lb. ground beef lower the fat content the better
  • ½ large red onion chopped
  • 2 Tbsp Minced Garlic
  • 2 tsp Marjoram
  • 2 tsp Rosemary
  • 2 tsp Oregano
  • 2 tsp Salt
  • 2 tsp Black Pepper

Sandwich

  • 7 Pita Breads
  • 7 Lettuce leaves
  • 7 Tomato slices
  • 4 Onion slices

Instructions

  • Place red onion in a food processor and process until finely chopped.
  • Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
  • Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro meat mixture will form together in the food processor, similar to a ball of dough.
  • Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.
  • Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.
  • Once removed from the oven, drain the fat.
  • Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.
  • Remove the weight and let rest for 30 minutes.
  • Slice the meat into desired sized slices.
  • Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!
  • Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.

Ingredients

Ground Beef Gyro Meat

  • 1 lb. ground beef lower the fat content the better
  • ½ large red onion chopped
  • 2 Tbsp Minced Garlic
  • 2 tsp Marjoram
  • 2 tsp Rosemary
  • 2 tsp Oregano
  • 2 tsp Salt
  • 2 tsp Black Pepper

Sandwich

  • 7 Pita Breads
  • 7 Lettuce leaves
  • 7 Tomato slices
  • 4 Onion slices

Instructions

  • Place red onion in a food processor and process until finely chopped.
  • Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
  • Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro beef mixture will form together in the food processor, similar to a ball of dough.

I like to think of myself as an equal-opportunity-eater, but when it comes time to pick favorites, Greek food is definitely near the top of my list.

Keeping with my recent string of posts on easy dinner parties, today is all about hosting a Greek Meze Party!

Just like with my Turkish Meze and Spanish Tapas parties, going with a “small plates” theme is the perfect way to host a low-key get together.

While visiting Athens I had the chance to try lots of different food, and I even took a cooking class to learn how to make some traditional recipes. Some of my favorite dishes (and my own recipes!) are listed below, but first we need to talk about equipment.

As per usual, I’m sharing my suggestions for equipment through affiliate links from Amazon because I’m a total prime junkie and I know you are, too.

Alright, here we go!

Greek Meze Tools

You really don’t need anything special to make these recipes, but I find that having these items on-hand make the whole process a breeze:

Mini Food Processor – great for making dips, spreads, and prepping chopped ingredients. I have a very serious relationship with my mini-prep plus processor. Get one from Amazon here (so many colors!), and then check out this article from Pinch of Yum that shows 12 Magical Ways to Use a Food Processor.

Small Scraping Spatulas – ideal for scraping those dips and spreads out of the food processor! Any small-size spatula will do, but if you’re in the market for one I like this set by OXO.

Sharp Knife – obvious, I know, but no one likes cutting tomatoes with a dull knife. I am a total Wusthof junkie (I favor the Classic Ikon series), and my favorite is the Deli Knife. So versatile!

Deep Fry Thermometer – ever tried to deep fry without one? I suck at it. If you’re already putting in an Amazon order, here’s the one that I use.

Adorable Serving Dishes – just go to World Market and go crazy.

Note: I’m still meat-free (8 months now!), so I’m sharing vegetarian recipes for this post.

Melitzanosalata, or Greek Eggplant Dip, is a simple yet tasty dish of roasted eggplant (also called aubergine), garlic, oil, and lemon juice. It’s perfect spread on toasted bread.

Traditional Greek Fava is one of the best things I tasted in Greece. All it takes is a handful of ingredients and half an hour. Serve with plenty of bread and red wine!

Greek Gigantes are, not surprisingly, GIANT beans! In this recipe, the gigantes are slow cooked in a rich tomato sauce until perfectly creamy and tender.

Turns out I had been making this classic “Greek salad” wrong my whole life. So glad I had the chance to learn to make it the right way while in Greece!

Greek Red Pepper and Feta Dip

This dip only takes five minutes but it will be a favorite among your guests!

Potato Skordalia

Orange Marinated Olives or Deep Fried Olives

Deep Fried Olives: The perfect holiday appetizer! Just dip some drained olives in a beaten egg, coat with bread crumbs, and fry in olive oil. Make sure you have extra jars of olives on hand, because these will disappear quick!

If you’re short on prep time, just hit up the olive bar at your local specialty market and set out a tray of olive varietals.

Rustic Olive Bread

Salty olives add a depth of flavor to this rustic bread recipe!

Any crusty bread will do, but the salty olives in this bread really pairs well with all of the mezes.

To Round Out the Party

Set out plenty of bread and sliced vegetables for dipping in the various mezes. Some dried fruit and nuts would be lovely, too!

Beverages: I never turn down a glass of Ouzo (an anise-flavored Greek aperitif), but it’s also nice to serve coffee or tea with a party. Don’t forget the wine!

Dessert: Samali, a Greek-style semolina cake, would be absolutely delicious. For something easier, prepare a simple dish of Greek Yogurt with Honey and Walnuts.

You could also go a little non-traditional and whip up an Apricot and Date Cream Cheese Coffee Cake, which you can prepare ahead of time.
