Ice cream sandwiches remind me of summertime by the pool. When you get out of the water that you’ve been in so long that your fingers are all pruned and someone hands you a delicious ice cream sandwich, that is the life.

What I love about these ice cream waffle sandwiches is that you can create them to anyone’s liking and really make it your own.

These are fun to make with your children since they can each make their own flavors.

How To Make Waffle Ice Cream Sandwiches

These ice cream waffle sandwiches are easy to make they just take time to solidify before you can dive in and enjoy. Of course, if you’re okay with a messy ice cream sandwich you can always dive in without freezing it altogether. It’s as easy as cooking some waffles, slapping on your favorite ice cream and then adding all of your favorite toppings!

First, assemble your ingredients for the batter. For exact amounts see the recipe card below.

How To Make Waffle Ice Cream Sandwiches

Whisk eggs in a large bowl until fluffy (you can either hand mix or use a mixer).

Add in the flour, milk, vegetable oil, sugar, baking powder, salt and vanilla and mix until smooth.

Preheat your regular waffle iron (you can use a Belgian waffle iron, but we have found that Belgian waffles make these ice cream sandwiches too bready and not as good as a regular waffle that is thinner and crisper).

Spray preheated waffle iron with non-stick cooking spray.

Pour on appropriate amount of batter for your waffle maker and cook to your desired crispiness.

How To Make Waffle Ice Cream Sandwiches

To make the perfect sized waffles I recommend this inexpensive mini waffle iron on Amazon, but if you have a larger waffle iron, you can always use that and then cut the waffles to the desired sandwich size.

Set the cooked waffles aside to cool to room temperature.

Take two waffles and add ¾ cup of your favorite ice cream onto a waffle, add the waffle on top and gently press down until the ice cream is even in between the waffles.  Then, garnish the outside with your desired toppings. We used four flavors of ice cream, sprinkles, chopped pecans, mini chocolate chips and caramel sauce.

How To Make Waffle Ice Cream Sandwiches

After you have created your desired Waffle Ice Cream Sandwich put a piece of parchment paper on a plate and transfer it to the freezer for the ice cream to firm.
